Foursquare Distillery in Barbados has released a limited edition single blended aged rum that is sure to be coveted by rum lovers around the world. This blend of double retort pot still and twin column Coffey still rums is distilled from molasses by Master Distiller and Master Blender Richard Seale, using a close-top fermentation process that takes 44-48 hours. The rum is aged for 12 years in ex-bourbon barrels, and contains no added sugar, coloring, or other additives. It has a lively nose with notes of star anise, spiced orange, vanilla, and licorice root, as well as undertones of Black Forest cake. The palate is long and elegant, with flavors of cinnamon, clove, bananas foster, fresh plum, and salted caramel, and hints of pineapple and toasted pine nut. The rum is non-chill filtered and has a proof of 60% ABV. This release, Mark XXI, is part of the Exceptional Cask Series, which aims to achieve balance and distinct vintages through careful selection of casks. This release is exceptionally elegant and refined, making it one of the greatest sipping spirits from Barbados.
