Clairette de Die is made according to the "méthode dioise ancestrale". The must ferments very slowly (over several months) in tanks. When about 55 grams of sugar per liter remains, it is filtered and bottled. The fermentation is then continued in the bottle. The deposit is removed a few months later. A maximum of 35 grams per liter of residual sugar will then remain in the wine.
The result is a slightly sweet, fresh, sparkling wine (7-9%vol) with a beautiful golden color, floral and fruity on the nose and mouth. With various desserts, including Panna Cotta, or if you like it a little sweeter, why not as a surprising aperitif.
