Vinification takes place in stainless steel tanks for a period of 10-12 days in order to extract a sufficient quantity of coloring substances and a correct tannic balance to obtain a wine that can withstand aging in wood. The fermentation temperature is controlled so that it does not exceed 28-30 ° C to avoid the excessive loss of characteristic aromas. At the end of the alcoholic fermentation the wine is kept at a temperature of 18-20 ° C in stainless steel tanks so that the malolactic fermentation is completed.
This wine is aged for a period of 14/15 months in barriques (30% new and 70% used) in order to obtain a good color stabilization and to make it softer and with a good component of sweet tannins. During this phase the wine is decanted every 6 months. After this aging period the wine is ready to be bottled and continues its aging in the bottle for about 6 months before being put on the market.
